Abstract
Beetroot has a natural red-purple color which is great for food coloring and provides many health benefits. It is therefore it provides a new innovation for other foods. Beetroot is one of the tubers that are easily found in markets and supermarkets in Indonesia. The objectives of this study were to knowing the level of preference for the panelists to Gethuk Lindri with the addition of beetroot as food additives for Gethuk Lindri. The method of analysis using corn flour as food additives for Gethuk Lindri, a traditional food to be found in Central Java and East Java made from basic ingredients of cassava, grated coconut, sugar and, salt and Gethuk Lindri to attain soft texture. The results showed that the distinguished composition of the difference in color, taste, aroma and texture of beetroot bitt at a percentage of 10%, 15% and 20%.
